Our computer had to go into the hospital this week. Well, more like one of Jason's friends offered to fix it in return for some car work in the future. We have been left with our ancient laptop that is slower than molasses. I only had the patience to edit one photo today and it was about all I could bear. But, I just had to tell you about these cookies.I saw Paula Dean make these on her show this week. I was so excited when I realized she never added flour. I dressed them up a bit with some melted chocolate. Jason ate 6 of these before he even knew what he was doing. They are that good.
Monster Cookies
Paula Dean's recipe called for M&M's and raisins in addition to the chocolate chips. I think they were really good with just some dark chocolate but I'm sure the kids would love them with candy inside.
3 eggs
1 1/4 cups packed light brown sugar
1 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 12-ounce jar creamy peanut butter
1 stick butter, softened
1 cup dark chocolate chips
2 teaspoons baking soda
4 1/2 cups quick-cooking oatmeal** (not instant)
1/4 c semi sweet or dark chocolate chips
Splash of milk
Preheat oven to 350.
Beat together eggs and sugars. Add salt, vanilla and peanut butter and butter. Then add 1 c chocolate chips, soda and oats.
Spoon batter onto parchment lined baking sheet and bake 8-10 minutes or until lightly browned. Cool.
Put remaining chocolate in a microwave safe bowl with a splash of milk. microwave in 15 second intervals until melted. Dip cooled cookies into melted chocolate just to cover the tops.
**I have found that regular oats don't seem to bother me, but I know most people with celiac can't tolerate them. If your baking these for someone with celiac, be sure to use gluten free oats.
